Wanting to repost my experience with IR20 rice and urad dal which I was able to catch hold when stock arrived since these are very much in demand given the output of the idli batter which comes out fluffy and soft idli. You cannot go wrong with atleast using SDP urad dal and other idli brand varieties available in Charlotte. your idli batter and softness will be always soft till the last drop.
Also if for some reason you do get one of these due to high demand. please buy either urad dal or ir20 rice or both recommended
I have been using store bought Idli rice for idlies since 16+ years. My idlies were good. No complaints about it. But I always felt something was missing. Probably moms touch, essence of nativity.
